Prepare in three easy steps

One: Preheat the oven to 180°C or 160°C for fan-forced. Grease a 20cm square cake pan, ensuring a 5cm depth, and line both the base and sides with baking paper.

Two: Whisk the filtered water, oil and vanilla in a large mixing bowl or jug.

Three: Sift the flour and cocoa powder into a large mixing bowl. Add caster sugar. Slowly pour in the oil mixture and gently combine. Once smooth, pour into pan and bake for 40 minutes or until a skewer inserted into the centre comes out clean. Cool in the pan for five minutes before transferring to a serving plate. Here, you can simply sprinkle with sugar and serve with your favourite toppings, such as berries and yogurt, or you can decorate it for Christmas.
